last minute wet burritos

I saw this recipe on another blog and I could NOT find it again! I looked through a bunch of Kitchen Tip Tuesday links, Works for Me Wednesday links, and a few recipe carnival links – no luck. Then, I walked away from the computer and actually made these WITHOUT a recipe! That is HUGE for me.

Ingredients:
1 package tortillas
1 can of refried beans
about a pound of ground beef
shredded cheddar cheese – at least 8 ounces
1 can of enchilada sauce

Directions:
Mix together the refried beans and the cooked ground beef.
Slather a couple spoonfuls onto the tortilla.
Sprinkle some shredded cheese on the bean/beef mixture.
Roll the tortillas and place in a baking pan.
Pour the enchilada sauce all over the rolled tortillas.
Sprinkle more cheese all over the top.
Bake at 350 degrees for about 20 minutes.

At the last minute, I remembered I had some corn on the cob in the fridge, which I steamed in the microwave for 8 minutes.

This meal is a hit with my entire family. Now we’re ready to start experimenting and modifying the base recipe. I already altered PinkGirl’s burrito a little bit. She doesn’t like sharp cheese or enchilada sauce, so I used a slice of American (torn in half) inside her burrito and nuked it for 30 seconds (without sauce).

It still bothered me that I couldn’t remember where I saw these originally. There were even step by step photos of the blogger’s husband preparing the meal. I sat back down at the computer and it hit me. The Google search string I needed:

  2. Oh, I’m SO glad you like them. My blogging friend Toni (http://thehappyhousewife.com) took a look at the contents of my pantry one day and suggested I make them with the ingredients I had on hand. I had never heard of wet burritos before, so she gave me a quick how-to. We’ve since adapted the recipe to our liking. It’s a recipe that every member of my family loves—even the picky ones.

    I’ve even started making the wet burritos with homemade enchilada sauce (I posted the recipe for enchilada sauce on my other blog, http://happytobeathome.net, in the recipe section). I had always avoided buying enchilada sauce because of the cost, but now that I can make it for a fraction of the cost, we can have wet burritos all the time, which my family loves!

  3. I just noticed in your picture that you didn’t drown your tortillas in enchilada sauce. When we make ours, I make a double batch of enchilada sauce and completely cover the tortillas entirely with the sauce. I’ve even refrigerated it that way over night and then baked it the next day. YUMMY! The tortillas are nice and soft and flavorful.

    I had you for Business and Professional Communication back in 1999. It was one of the most helpful courses I took at UCF. I learned more from you than many of the PhD’s in the communication department. At the time you were a consultant and only had your son! I think he was three or so. You told us that you wanted to retire by forty! I remember thinking, “now THERE is a woman with a PLAN!”

    Kerri – What a compliment! Thank you so much! I’m not teaching at UCF any more, and I almost retired, but the truth is, I really enjoy what I do, so I just diversified to do even more of my favorite things! I don’t work very many hours though – usually less than 10 a week. (by JSM)
